Here is my rendition of a recipe I found online. Just tried it out tonight, and it was great!
<span style="font-weight: bold">Ingredients:</span>
•Mahi Mahi fillet(s)
•Can of diced tomatoes w/green chilis
•Butter
•Lemons (for juice)
•Tequila (or white wine)
•Onion
•Salt & pepper
•Jar of garlic
<span style="font-weight: bold">Preparation:</span>
1.Preheat oven to approx. 400 degrees.
2.Place fillet(s) of Mahi Mahi on tinfoil, add slices of butter and spread garlic on top.
3.Dice onions and juice the lemons. Place onions on top of fillet(s) and add the juice.
4.Open can of diced tomatoes and green chilis. Place on fish. Add salt and pepper to taste.
5.Pour some tequila on the fillet(s).
6.Cook for approx. 30 min. Or until fish flakes.
I just made this for myself, so I didn't add the amounts to use. It is pretty easy to judge for yourself what is appropriate to use though, the recipe is really simple. Just layer the ingredients on the fillet(s). I served with a side of rice, but really whatever floats your boat for a side go ahead and use.
