Here is my rendition of a recipe I found online. Just tried it out tonight, and it was great!

<span style="font-weight: bold">Ingredients:</span>
•Mahi Mahi fillet(s)
•Can of diced tomatoes w/green chilis
•Butter
•Lemons (for juice)
•Tequila (or white wine)
•Onion
•Salt & pepper
•Jar of garlic

<span style="font-weight: bold">Preparation:</span>
1.Preheat oven to approx. 400 degrees.
2.Place fillet(s) of Mahi Mahi on tinfoil, add slices of butter and spread garlic on top.
3.Dice onions and juice the lemons. Place onions on top of fillet(s) and add the juice.
4.Open can of diced tomatoes and green chilis. Place on fish. Add salt and pepper to taste.
5.Pour some tequila on the fillet(s).
6.Cook for approx. 30 min. Or until fish flakes.


I just made this for myself, so I didn't add the amounts to use. It is pretty easy to judge for yourself what is appropriate to use though, the recipe is really simple. Just layer the ingredients on the fillet(s). I served with a side of rice, but really whatever floats your boat for a side go ahead and use.

Here, lets tune it up a bit. Mahi Mahi is junk fish, dime a dozen taste and served as a basic fish sandwich all over HAwaii due to being such a cheap mo fo.

Red Snappper,Grey/Black Sea Bass,Grouper, or Wahoo
Fresh sliced Jalapeno's and Serrano chilis, seeded
Fresh tomatoes, seeded and diced
Diced onions
chopped garlic
Sauza Hornitos Tequila
Fresh Lime Juice
Salt and Pepper

Oven: 400

Get your pan that will hold all your fish. Remove the cheap ass rubber handle from it. Put some oil in it, onto a hot fire, and wait for it to start to smoke. sear the fish and turn it. Now toss in the veggies. Sear them until they are translucent and add some salt and pepper. Now deglaze that sucker with a double shot of tequila. Add the lime juice and give it a toss.
Put it into the oven for about five minutes or until the fish is finished.

In your other pan, you have taken some ol rice and sauteed it up with a half can of Ro-Tel, salt and papper, onion and garlic and a dash or two of taco seasoning(you can fake it with a mix of cumin, chili powder, onion powder, garlic powder, adobo powder, salt and papper).
You have also taken another pan and sauteed some jalapenos, onions, garlic, and beans until the beans are done.

Now put it all on a plate. Make a pile of rice at the side of the plate, spill some beans around it like a smile.Place the fish on top of the rice so it slants down onto the beans and dump some sauce over the works.
Garnish it with a bit of chopped jalapeno, garlic and onion

Of course you can either drink your tequila on ice, or mix it with lime juice, a little patron la orange, and call it a margerita, or you can blend the works, but either way you have it, the fish, rice and beans and drink will kick ass and go well with warm tortillas

Now get out there and bring it up a notch and impress your freinds with your newly found mad skills
