Self-proclaimed Pit Masters of SH- I've got some questions

For those here that are well versed with the smoking of meat- I've got a Weber SMC coming this week and it'll be my first experience into giving this type of cooking a try myself (although I am a longtime fan of the end result). So as mentioned- I've got a SMC coming, approximately 70lbs of Kingsford Blue Briquettes, as well as Hickory/Cherry/Mesquite/Pecan/Apple Wood chunks.

I've been reading through various online articles and watching YouTube videos over the past week and it sounds like either pork butt or chicken thighs is the most forgiving for starting out and I'm leaning towards starting with the thighs myself. I think I'm good with the importance of maintaining temperature and how to do it (I also have a Termopro temperature gauge in the order with two probes, one of which I believe is best served to use one to monitor the ambient temperature at the rack with the 2nd being used to monitor meat temperature), understand the trimming of various cuts of meats, dry rubs, and marinating/basting timing. If I start with the thighs, I'm thinking of using either the Pecan, Cherry or Applewood for the first time (I prefer the heavy smoke flavor that hickory or Mesquite will impart but I'll likely have a crowd to evaluate how things turn out so understand the alternatives to be a bit milder/safer for a group.

I'm still trying to figure out the whole wet/dry brining element though as well as to understand the variations in smoking temperature. I've also seen some recipes where they put the chicken thighs in a pan rather than directly on the grill/arguments on whether or not to use the water pan (seems to focus more towards it being more favorable for the lower temperatures as far as I can tell but chicken seems to want to be smoked hotter than say the pork butt ... So many variables and I'm still trying to figure it all out.

All that said- for the Pit Masters here, any tips/tricks for someone starting out on their smoking journey that you'd be willing to share?

Firearms LRI Remington 700 in 6.5cm 1900 shipped or trade. PRICE DROP

Had LRI build this a few years back. Mounted a Zeiss 6-36 on it, did some load development on it, then never shot it again. The barrel's a stainless cut rifled K&P in the standard Remington 700 Varmint contour, and the actions a stainless 700 SA. They blueprinted the action, timed the bolt handle, installed dual ejectors, M16 style extractor, and enlarged the scope base holes to 8-40. The trigger's a single stage Triggertech special set at around 1lbs. It has a steel 20moa base on it along with an Erik Cortina precision bolt shroud. Had the local cerakoter coat the entire gun. I then bought a custom HS Precision stock, and had a reputable smith glass bed it.
While working up a load, I used Alpha brass, federal srp's, Varget and Berger's 140 grain hybrids, it would never shoot over .75" no matter what charge weight went in. The load it liked was 37.3 grains. When I found that, I then moved on to the other guns in my fleet and kind of never came back to it. It has around 250 rnds through the pipe. To shoot this I took it off the wall, put in a hard case, took it to the bench, back in the hard case, and back on the wall and that's how it lived.
Now the possible 'con'; I feel personally, the gun feeds better with the blind magazine box seated tight in the receiver rather than just hangin out, which it does. The smith that bedded it told me this is how they were made, with some play in them. Your mileage may vary. And lastly, when the receiver was being faced to true it up, they took a little more off the receiver than normal, which makes the recoil lug sit about 7 thou further back in the stock than factory, so if you want to switch stocks on this rifle, you'll have to shave a tad off of the rear wall of the receiver pocket to make it fit. Shouldn't be a big deal for someone that screws with guns a lot.

3x magnifiers

After using my 11.5 for 5 years now with just a T2, I’m looking to add some quality of life at the range and add a 3x magnifier on a QD mount. What’s the consensus on the best 3x magnifier under $400-500? I’m probably ok with spending 3X-C or maybe 3X-P money, but hard for me to justify beyond that unless it’s mind blowing somehow.

I was kinda set on the 3X-C, but just saw the C_DOES review showing the relatively small FOV compared to a Primary Arms so it’s got me rethinking. The Vortex Micro caught my eye at one point because I don’t mind Vortex stuff and it comes with a mount and have seen it all in for $200, but I don’t mind spending more for quality. I run my stocks all the way out and understand these will have poor eye relief so good eye relief would be a bonus.

I’d floated getting a $calarworks to mount the Aimpoint so if there’s a $500-ish package with a mount that makes more sense, let me know.
